Banana Yogurt Smoothie and Curry Chicken Sandwiches

You know the feeling when you know that the person who cooks all the food for you is going to be gone for a day or two and all you can think about is "WHAT AM I GONNA EAT MOM, I'M GONNA STARVE, AREN'T I?!!" Followed by 5 billion tears and the whole "HOW CAN YOU DO THIS TO ME." It's like, who cares where you go, just feed me while you're gone mom.
In my defense, I'm bit of a spoiled brat who cooks to relieve stress more than anything. When it comes to cooking for a large group of people, I get way to anxious to enjoy myself. It begins to feel more like a job rather than being one of my favorite hobbies.

Hence why I make my mom cook regularly while I just cook whenever I feel like it. Oh the problems of a privileged person. You know what though? Not every daughter lectures their mom about eating healthy as much as I do, so in a way, she's spoiled by my lecturing endless love for her.
This past Wednesday, my parents and aunt and uncle visiting from Scotland went for a day trip outside the city, leaving us children foodless. Seriously, my mother might as well tell me she doesn't love me anymore.
In an act of desperation, my youngest brother and I went raiding through our two big fridges, our mini fridge and our pantry and to our luck, we found some chicken left over from my quesadilla's I had made the night before for my friend K.G. Thank God, I was almost about to make tuna sandwiches but I don't enjoy them nearly as much as I enjoy chicken sandwiches. Chicken>Tuna, always (I don't care what you say Anna).
My brother helped me cut stuff and mix things and so forth. He was basically my little helper for 30 minutes, though he's not very little I guess, unless you consider 16 little. I love bonding with people over food. I love sampling the food as you work along and being engaged in what you're doing while enjoying the company of the people you love the most. All of our hard work got us some delicious curry chicken sandwiches and a filling, wonderful smoothie! It also got us some sibling time so I guess something good did come out of mom leaving us to starve. I hope she doesn't make a habit out of it though.

Curry Chicken Sandwiches (This is a very eye balled recipe and since I have no sense of weight, this is a very rough copy of my recipe). This made 4 sandwiches or 8 halves or 16 fourths.

Ingredients
1 pound cooked, shredded chicken
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
2 teaspoon chili powder
1 teaspoon chopped cilantro
1 tbsp chopped pistachio
Salt and pepper to taste
1/2 cup Mayonnaise
8 slices white bread
Coarsely copped spinach
Thinly sliced tomatoes
Thinly sliced cucumbers

Instructions:
1) Mix chicken, cumin powder, turmeric powder, chili powder, pistachio, chopped cilantro, salt, pepper, mayonnaise in a bowl and set aside.

2) Top one slice of bread with spinach, tomatoes, cucumber and add chicken mixture. Top with remaining piece of bread.


Banana Yogurt Smoothie. This made 2 smoothies so you can just half it if you're only making this for yourself.

Ingredients:
2 Bananas
4 tbsp of Greek yogurt*
10 ice cubes
1 1/2 cup 2% milk
2 tbsp flax seed
2 tbsp honey

Instructions:
1) Combine bananas, yogurt, ice cubes, milk, flax seed and honey in a blender and mix for about 2 minutes.

*If you don't have Greek yogurt, you can just use plain yogurt. It tastes just as good.
You can also replace the bananas with strawberries but you may want to add a bit more honey since I find strawberries to be more sour than bananas. Maybe I just tend to buy really crappy ones.
